38% of all the food recalls in the U.S. are due to food allergens. This short course is designed to increase understanding of food allergens, how unintentional contamination with food allergens can happen, and how to manage allergens at all levels during manufacturing to prevent cross-contact. 

Presentation can be adapted to different settings such as camps, child care providers, schools.
